Arugula. It's What's for Dinner.

The South of the James Farmers Market opened back up today! Good thing, because I have been thinking of nothing but arugula lately--it borders on an obsession, I swear!

I had to work late tonight, so dinner was at 8:30 and I wanted something fast to prepare and not too heavy. Andy peeled and oven roasted some beetroot and blanched some asparagus before I got home, so all I had to do was assemble the divinely tasty salad:

Fresh arugula
very thinly sliced purple onion
roasted beetroot cut in cubes and still slightly warm
crumbled gorganzola
blanched asparagus
dressing of olive oil, balsamic vinegar, honey, dry mustard and black pepper

The slightly sweet dressing, peppery arugula, and the pungent cheese were a lovely medley. The beets were delicious and slightly warm, so they wilted the greens just a little. The asparagus gave just a little crunch. It was just right, and very pretty to boot. I ate it so enthusiastically that no pictures were taken. Sorry.

I still have half a bag of the arugula left. I must think of something gorgeous to do with it tomorrow.

this is my all time favorite green / herb - I eat it all the time and I think it doesn't even need salad dressing most of the time - it is also versitile - salads soups sandwiches - hot cold anytime - thanks for posting!!!

Mmmm, yes, on a sandwich instead of plain old lettuce--it is lovely! It tastes good with everything!

I need to go to our market...I didn't go at all last year for some reason. I know I would eat more salad if it came fresh!
